Our Journey to Reinvent Food

When Javier’s dad was diagnosed with diabetes, he discovered the hidden sugars in most sugar substitutes. This realization sparked his commitment to combat the food pandemic fueled by harmful ingredients like sugar and trans fats. Determined to create a healthier alternative, he found xylitol, a remarkable sugar substitute—expensive, but effective. Teaming up with Lorena, an expert in biorefineries, they developed a way to produce xylitol from agricultural waste through fermentation. Later joined by Isabella, a skilled food engineer, Creative Food Labs was born.

2021

Creative Food Labs is born as a CPG startup, importing and selling xylitol under the brand Xilinat. First funding of 100k USD through an accelerator, selling via digital channels.

2022

First experimental results. We continue positioning xylitol in the Mexican market, adding B2B sales.

2023

Pre-seed round of 350k USD via SAFE, and first supermarket sales through HEB.

2024

First year of 100% revenue growth, focusing on digital channels. Opening seed round.

2025

Closing seed round. Optimizing lab processes for pilot scale-up. Second year of 100% growth, focusing on supermarkets.

2026

Third consecutive year of 100% growth with larger B2B clients.

2027

Series A round to scale xylitol production to a pilot plant.
